Aeros Cultured Oyster Co.
Aeros, founded by marine biologist Karen Rivara, is a hatchery that grows oyster, hard clam and bay scallop seeds, known as spat – for further nurturing by nature, oyster farmers and baymen. Shellfish spawning begins in February to produce juvenile seeds for the summer growing season. Shellfish production from hatcheries insures farmers that there will be a sustainable crop of shellfish each year.

Cornell Oysters
Cornell Oysters was started in 2003 by father and son team Roger and Tom Cornell. Father Roger was a commercial fisherman and lobsterman, but needed to find a new path to survive when Mother Nature did not cooperate. Cornell’s SPAT program provided oyster farming know-how, and 16 years later Cornell Oysters (Hog Necks brand) is an established favorite on both forks.

Ted and his team are on a mission to revive the once thriving North Fork oyster industry. They carefully nurture their high quality, sustainably grown and NY State certified oysters in Greenport, then move them to the pristine waters of Southold Bay to finish their life cycle. They frequently tumble, clean and sort their oysters giving them their exceptional appeal, deep cup and uniform size.

Peconic Gold Oysters
Peconic Gold is a boutique oyster farm located in Great Peconic Bay. Their goal is to continue the legendary tradition of Long Island oyster farming and produce the best half shell oyster on the East Coast. “Sustainable practices help give back to the waters that provide our livelihood”. A boutique-style specialty plant nursery located on 14 landscaped and wild acres in Calverton, providing passionate gardeners with garden-worthy plants since 1986.
